quinoa porridge with raspberries

Quinoa Porridge

Just what is needed in cold snowy weather, some warming, tasty & nutritious porridge to kick start the day and to keep energies high naturally.

Serves 2


1/2 cup quinoa, rinsed
1 cup plant based milk of your choice (I used unsweetened coconut milk from a carton not can this morning)
1 tsp maple syrup
Pinch of Himalayan salt
1/8 tsp turmeric (anti-inflammatory properties)
1 tbsp peanut butter (I use ‘crunchy’ and you can use any nut butter)
1 tsp crushed unsalted peanuts
Handful of mixed fresh berries/1/2 banana


  1. Put all the ingredients (except peanut butter & peanuts) in a saucepan and bring to the boil
  2. Simmer gently on a low heat for 20 minutes (until milk has evaporated & quinoa is cooked/soft)
  3. Once porridge is cooked, serve in bowls and top with peanut butter, peanuts & berries/fruits of your choice
  4. Add a drizzle of maple syrup & extra coconut milk if desired

Optional:  sprinkle cinnamon powder on the top for added flavour
