Vegan Curry Tofu Cubes

Tofu, on its own, is pretty tasteless therefore, to really give it some flavour, you need to add good herbs and spices to create a truly tasty dish.

Serves 4

Ingredients

400g of firm tofu, cut into cubes
4 tbsp gluten free self-raising flour (I use Dove’s Farm)
1 tbsp corn flour
1 tbsp flax seeds
1/2 cup of cold water
Pinch of salt
1 tbsp curry powder
1/4 tsp smoked paprika
Sunflower oil for frying (approx. 2 tbsp)

Method

  1. Pre-heat oven to 180C
  2. In a bowl, whisk the flours, flax seeds, salt & cold water until it forms a medium firm batter (not too watery and not to thick)
  3. Add the spices and whisk
  4. Add the tofu cubes and make sure that the batter coats all sides of the tofu cubes
  5. In a non-stick frying pan, add the oil and once heated add the tofu pieces.  Cook on each side for 1 minute, until golden brown and ensure that ALL sides are fried
  6. Put the tofu pieces into a baking tray, cover with baking paper and bake in the oven for 20 minutes

I serve this dish with a chunky vegetable stir fry (this is great for using up all those vegetables hanging around in your veggie refrigerator drawer).  Sauté the veggies in 1 tbsp of sunflower oil, 1 tsp of curry powder and a pinch of salt and pepper until tender, accompanied by roasted potatoes (I use both white and sweet potatoes).

Orange & green peppers, mushrooms, carrots, celery & fennel.
