Vegan Cinnamon Granola

I love making home made granola only because I can add only the ingredients I enjoy eating and of course ensure it is healthy without adding any sugars, fats & salts.  This can be tailored to your tastes so add all the goodness fruits, nuts, seeds and flavours you like to create a truly tasty and healthy granola mix.  Great for breakfast and as a nutritious snack/trail mix on the go.

8-12 servings

Ingredients

1/2 cup whole unsalted cashews
1 cup blanched unsalted almonds
1/2 cup walnuts
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup mixed natural no added sugar raisins, currents, cranberries
1/2 cup coconut flakes
1 cup buckwheat or rye flakes
1 tbsp cinnamon powder
pinch of Himalayan salt

Method

  1. Mix all the ingredients in a bowl and lay out on a flat baking tray
  2. In a pre-heated oven at 185C, bake the mix for 20 minutes, mix and continue to bake for a further 10 minutes until golden
  3. Leave to cool before transferring into an airtight container.  The mixture will keep for 1 month if kept in a cool dry place.

This truly delicious granola is great on top of yoghurt (I enjoy mine with coconut yoghurt).
