Vegan Avocado and Chickpea Salad

This salad is so tasty and is full of natural fats (from the Avocado) and natural nutrients from the chickpeas and of course the salad ingredients.

Servings

Serves 4 as a main meal or 8 as a side dish

Ingredients

4 medium avocados, remove stone and slice into bite size pieces
2 cans of chickpeas (in water) drained
1 mango (seeded and sliced into small pieces – optional) OR 1 yellow pepper chopped into small pieces
2 large bags of fresh spinach, rocket & watercress

Method

  1. Add all the ingredients into a big salad bowl and toss until well mixed.

I love a dijon mustard and lemon juice dressing which works perfectly with this salad.

Dijon Mustard Dressing

Ingredients

2 tbsp of dijon mustard
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 tsp honey/agave/maple (optional for sweetness)
Salt & pepper to taste

Method

  1. Whisk the ingredients together and drizzle over the salad, giving it a good mix before serving.
