Creamy, full of flavour and zingy are flavours to make any raw dish delicious! Here we use avocado to make this pesto creamy as well as using it for it’s delicious and nutritious natural fat elements.
1/2 cup cashew or pine nuts
1/2 cup fresh basil leaves
4 tsp olive oil
1/4 tsp sea salt
Pepper to taste
- Add all the ingredients to a blender and mix until smooth.
- If you don’t like your pesto to zingy, start with only the juice from 1 lemon and gradually add until you are happy with the taste.
This pesto will keep fresh in the fridge for up to 2 weeks.
The pesto is great served with courgette noodles and with raw pizza (on top of raw crackers and lots of fresh vegetables)!
This pesto will keep in the fridge for 10 days.
