The past week has been a mix of all things fun and not so fun.
The fun side has been, what with it being half term, I got to share a few days away in Weybridge with family and with my exciting, energetic and wonderful nephews, age 8 & 10, keeping me firmly on my toes and active.
The not so fun part was that on our returning home on Friday, my mum was taken ill and the last couple of days has been running around at GP surgeries, GP visiting home and finally ending with a hospital visit Saturday afternoon. After numerous blood tests and investigations, mum is recovering back at home with some medication and other wonderful natural and herbal remedies I have added into the mix to aid her recovery over the coming days.
In addition to the medication and the remedies, I have been making healthy and nutritious ‘one pot’ dishes to speed up her recovery, ensuring that whatever I make is fully loaded with anti-oxidants, minerals, vitamins and much needed magnesium, potassium and fibre!
Hence, thinking about the dishes I have created over the past 48 hours, I wanted to share some of them with you. Of course these dishes are suitable for everyone however I feel and know that as our parents start to get older, and indeed we start to get older, we don’t always manage to consume all the nutrients that the body so desperately needs hence creating these ‘fully loaded’ healthy & delicious dishes.
Firstly, my big advise is KEEP HYDRATED! Regardless of the weather outside, be it hot or cold, drink…..drink lots of water (minimum 2 litres a day). Hydration or lack of it is one of the highest killers amongst the elderly in hospitals today. It is not only an easy way to ensure the body is kept healthy, it is FREE! In this country we don’t have any excuse for not having clean drinkable water to hand…on tap!
Keeping hydrated is key. I am lucky because I love drinking water simply because of my mums passion for drinking water. My mum makes drinking water fun and tasty and always has a glass of ‘fruity water’ to hand. I swear that this refreshing liquid has been a life savour for my mum after many years of not taking good care of the body (through smoking and drinking alcohol) however having given up these 2 vices approx. 25 years ago, mum has replaced it with glasses of pure juicy water day in day out. Anyone who knows my mum will know that she doesn’t travel anywhere without her essentials: an orange, a lemon, a lime as a minimum.

It sure does make water more exciting, tasty and a pleasure to drink. Try it for yourself! You can mix any flavours you like, playing around with different herbs, fruits and even vegetables. This is great for kids and will hopefully increase their consumption of water too.
So moving swiftly onto my ‘one pot’ dishes.
Firstly, I make a fully loaded one pot soup which has everything in it. It is not only nutritious, it is full of vitamins, protein, carbohydrates, magnesium and more………Try it for yourself and let me know what you think
The second dish I created today is a delicious Red Pepper, Sweet Potato & Butter Bean stew. This dish is so tasty it will keep you making it again and again. Try it out for yourself.
