Sundays, I find, are a day for resting, recharging, contemplation and reflection.
I use this time to step back and reflect on all the goings ons of the past week, accept what has happened and start to think about the week ahead. It is especially nice that here in the UK we have a Bank Holiday tomorrow (Monday) which gives us an extra day to rest and relax and start to slowly contemplate some actions for the coming week.
I kickstarted my morning with a beautiful long walk out in nature, in the sun, which was actually quite warm today and enjoyed the breeze which kept me cool on my journey.
What does your Sunday look like?
I love this picture. Basically what I take from it is that whilst we make some time to quieten the mind, rest and reflect, we need to listen to our heart, be in tune with our inner self and take the necessary action based on what we hear our heart telling us.
Sometimes I reflect and think that there is no such thing as reality, only perception! We create these perceptions through the lenses in which we see the world. Can we change these perceptions? Of course we can….these lenses, or some call them filters, are built around our values, beliefs, strategies, language, memories and decisions. Change these patterns and you can change your reality and once you master this, you start to take control (or take back control) of your life.
I love these strategies and use them often through my work with **NLP (Neuro Linguistic Practices) ** and endeavour to practice this more and more in the coming months alongside my knowledge and experience for becoming a Health Coach and Chef.
So with all this in mind, you are wondering what’s cooking in the kitchen right?
Well late morning kicked off with a simple fresh juice. This consisted of:
2 small beetroots
8 celery sticks
1 green apple
1/4 of 1 whole long cucumber
1/2 inch fresh ginger
1/2 inch fresh turmeric
Juice all the above and then blend (I used my new Ninja blender) the following:
1 cup fresh spinach
1 tbsp of lecithin granules
I topped with a sprinkling of desiccated coconut and a grating of raw chocolate for added crunch.
Truly creamy, delicious and a great brunch replacement.
Recently I have 2 new super foods/go to supplements.
One is Soy lecithin has many health benefits. It adds creaminess to smoothies and recipes and is a source of choline, which helps dissolve fat and cholesterol and can help regulate your kidney, liver and gallbladder function. Lecithin is an essential nutrient that is required by your body, but not made in adequate amounts. I buy mine from Holland & Barrett.
Two is Golden berries which are low in calories (53 calories per 100 grams). They contain vitamins A, C, E, K1, B1, B2, and B3, as well as fatty acids and phytosterols. Trace amounts of calcium and iron, plus other minerals are also found in golden berries. I eat these as a delicious, sour & zingy snack, to munch on whilst I work!
For dinner, I have soaked some brown lentils and will have this with brown rice, sautéed tofu and a big salad (pictures to follow).
